Originating in Sweden, Semla is traditionally enjoyed during Lent, particularly on Shrove Tuesday. This sweet bun, filled with almond paste and whipped cream, symbolizes the end of winter and the arrival of spring. Today, Semla is celebrated beyond its religious roots, with variations found across Scandinavia and even in modern cafes worldwide, where it is often enjoyed year-round.

Marzipan can be a more cost-effective alternative.
Dissolve the yeast in cold milk using hands, mix for a couple of minutes, and leave for 15 minutes.
Add 1 egg, flour, butter, sugar, cardamom, and salt to the yeast mixture and mix on the machine for 10-12 minutes until the dough is elastic.
Roll the dough into 60-gram portions and leave to rise at room temperature for about 2 hours.
Mix 1 egg with a little milk and gently brush over each bun before baking.
Bake the buns in the oven until golden brown, then let them cool completely.
Toast almonds in the oven for a few minutes, then mix with powdered sugar, vanilla sugar, and a bit of salt.
Process the toasted almonds in a food processor until slightly crunchy, adding 2-3 tablespoons of water to achieve a moist consistency.
Put the almond filling in a piping bag and refrigerate it for later use.
Cut a triangle in the bun and remove some excess filling to make space for the almond filling.
Fill the buns with the almond filling, sprinkle with chopped toasted almonds, and pipe whipped cream on top.
Replace the tops of the buns and dust with powdered sugar.
