In a large pot, boil 1 kg of peeled potatoes in salted water until tender.
Chop 250 g of bacon and sauté in a pan until crispy.
In a bowl, mix 500 g of ground beef and pork with breadcrumbs, 1 tablespoon mustard, 1 teaspoon nutmeg, 1/2 teaspoon black pepper, and 1/4 teaspoon salt.
Form the mixture into 4 large meatballs.
Melt 4 tablespoons of butter in a skillet until it turns brown.
Add the meatballs to the skillet and cook until browned on all sides, then lower the heat and cover halfway to simmer for 30 minutes.
While the meatballs are cooking, drain the potatoes and mash them with 1/2 cup milk, 1 tablespoon mustard, and additional seasonings as desired.
Serve the endive mash topped with the meatballs.
