Falafel

Cultural Context

Originating from the Middle East, falafel is a popular street food made from ground chickpeas or fava beans. It holds cultural significance as a staple in vegetarian diets and is often served in pita bread with fresh vegetables and sauces. Today, falafel is enjoyed worldwide, with variations in spices and serving styles reflecting local tastes.

1 cup fresh parsley
1 cup fresh cilantro
1/2 cup fresh mint
3 cloves garlic
2 tablespoons sesame seeds
1 medium onion
1 jalapeno pepper, minced
2 cups chickpeas, soaked
1 cup fava beans, soaked
1 teaspoon baking soda
1 teaspoon salt

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Pick fresh herbs: parsley, cilantro, and mint.

2

Soak 1/2 cup dried chickpeas and 1/2 cup peeled fava beans overnight in water and drain.

3

Process the soaked chickpeas and fava beans in a food processor with a pinch of salt until coarsely ground.

4

Add a big pinch of toasted sesame seeds (about 1 tablespoon), 1 clove of garlic, coarsely chopped onion (1 small), and 1 whole jalapeno pepper to the processor.

5

Process the mixture until aromatic and well combined.

6

Add 1/2 teaspoon of baking soda and stir quickly to combine.

7

Refrigerate the falafel mixture for at least 30 minutes, up to a day, to help it hold its shape.

8

Shape the falafel using an ice cream scoop, making balls about 1.5 inches in diameter.

9

Heat neutral oil (safflower or canola) in a deep pan to 375 degrees Fahrenheit.

10

Fry the falafel in batches, cooking for about 30 seconds on each side or until golden brown, turning by eye.

11

Serve the falafel hot, optionally with tahini yogurt sauce, lemon, and garlic.
