Patagonia lamb is a celebrated dish from the southern region of Argentina, known for its rich flavor and tenderness. Traditionally, it is cooked over an open flame or in a wood-fired oven, reflecting the region's gaucho culture and love for outdoor cooking. This dish is often served during special occasions and gatherings, showcasing the natural beauty and culinary heritage of Patagonia. Today, it has gained popularity beyond Argentina, with variations appearing in restaurants worldwide.

Preheat the oven to 350°F (175°C).
Prepare a butterflied lamb leg, which means the bone has been removed and the meat is cut thinly to about 1 inch thick.
In a bowl, combine 1/2 cup of extra virgin olive oil, 2 tablespoons of fresh squeezed lemon juice, and the zest from the lemon.
Add 1 teaspoon of garlic powder or fresh garlic, 1 teaspoon of onion powder, and 1 teaspoon of sea salt to the mixture.
Whisk the ingredients together until combined.
Chop 1 bunch of fresh parsley, 4 tablespoons of fresh rosemary, and 3 tablespoons of fresh thyme, then add them to the bowl.
Mix the herbs into the olive oil mixture until well combined.
Place the butterflied lamb leg in a ceramic baking dish.
Pour the herb mixture over the lamb leg, using a spatula to press it onto the meat.
Put the lamb in the preheated oven and roast for about 15 minutes.
Check the internal temperature of the lamb; it should reach 135°F (57°C) when done.
If it hasn't reached 135°F, check the temperature every 5 minutes until it does.
Once the lamb reaches 135°F, remove it from the oven and let it rest for a few minutes before serving.
