Prepare a butterflied lamb leg, which means the bone has been removed and the meat is cut thinly to about 1 inch thick.

In a bowl, combine 1/2 cup of extra virgin olive oil, 2 tablespoons of fresh squeezed lemon juice, and the zest from the lemon.

Add 1 teaspoon of garlic powder or fresh garlic, 1 teaspoon of onion powder, and 1 teaspoon of sea salt to the mixture.

Whisk the ingredients together until combined.

Chop 1 bunch of fresh parsley, 4 tablespoons of fresh rosemary, and 3 tablespoons of fresh thyme, then add them to the bowl.
