Prepare the ingredients by cutting the cabbage into small pieces and soaking the glass noodles in hot boiled water for 1 minute or 15 minutes in room temperature water.

Combine all ingredients for the filling: 3 lb ground pork, 1 large diced shallot, 3 tbsp green onion, 1 large shredded carrot, 400 g COA salad, 4 small bundles of soaked glass noodles, 300 g minced shrimp, 1 egg yolk (optional), 1 egg white, 1 tsp salt, 1 tbsp chicken powder, 3 tsp sugar, 2 tbsp oyster sauce, 1 tsp ground pepper, and 1 tsp garlic powder.

Mix the filling thoroughly until it becomes sticky, ensuring the flavors are evenly distributed.

Use your hands to mix the filling for about 5 to 7 minutes, cutting any long noodles if necessary.

Scoop about 1 teaspoon of filling onto a small spring roll wrapper, fold the sides in, and roll tightly, sealing with egg white.

Heat oil to 300°F (150°C) and fry the spring rolls for 10 minutes.
