2 chicken thighs or breasts, thinly sliced
2 tsp kecap manis
3 tbsp olive or vegetable oil
1 shallot
1 long red chilli, finely chopped
4 garlic cloves, finely chopped
½ tsp shrimp paste
2 cups cooked rice
3 spring onions (Green onion)
2 eggs
Half Lebanese cucumber, sliced
1 tomato, sliced to serve
¼ cup fried shallots (Optional)
Chili sauce (Optional)

In a mortar and pestle or blender, combine shallot, long red chilli, garlic cloves and ½ tsp shrimp paste.

Add oil to a wok over medium heat and fry paste until you smell the fragrance. Add chicken pieces and continue cooking until cooked through.

Add the rice and kecap manis and stir-fry until well combined. Make sure each grain of rice has been coated. Remove from heat and divide among serving bowls.

For the fried egg, place oil in a pan, once hot crack and egg and baste it using a spoon. Add a little soy sauce then top the rice with a crispy egg. Serve with cucumber, tomato, your favourite chili sauce, and sprinkle with crispy fried shallots.
