2 medium onion

Lemongrass bruised
Daun kesum a handful
1/2 Bunga kantan thinly sliced
Half packet sambal nasi lemak paste 200g
1.5 tbsp fish curry powder
1 tsp kunyit powder
2.5 Tbsp asam jawa plus 1 litre water
2.5 tbsp sugar
1.5 Tbsp salt
Fish sauce according to taste
1 tsp ikan bilis stock powder
1 tsp pepper powder

Blend the 2 medium onions, 5 garlic cloves, 1 serai, 1 bunga kantan, and 1 inch ginger until smooth.

In a pot, add the blended mixture and sauté until fragrant.

Add in the 800g of fish and cook until it is partially cooked through.

Add the 12 bendi and 1 large tomato cut into wedges, and lemongrass bruised.

Stir in the daun kesum and 1/2 bunga kantan thinly sliced.

Add half a packet of sambal nasi lemak paste, 1.5 tbsp fish curry powder, 1 tsp kunyit powder, and mix well.

Pour in 2.5 tbsp asam jawa mixed with 1 litre of water and bring to a simmer.

Season with 2.5 tbsp sugar, 1.5 tbsp salt, fish sauce to taste, 1 tsp ikan bilis stock powder, and 1 tsp pepper powder.

Taste and adjust seasoning as necessary, especially after adding the tomatoes.
