2 bay leaves

Melt 200 g of butter in a Dutch oven until slightly brown.

Add 1 kilo of stew meat and brown for about 15 minutes.

Add 2 diced onions and stir to incorporate.

Cover and let it sit for 1 hour.

After 1 hour, add 1 diced tart apple, 1 scoop of sugar, 1 tablespoon of red wine vinegar, 2 bay leaves, and 2-3 cloves; stir and cover again.

Let it simmer for 15 minutes.

Add water until it goes just above the meat, stir, and cover.

Cook for 2 hours, stirring every 15 minutes until the meat is tender and fibers start to separate.

Remove bay leaves and cloves before serving.

Add crushed speculose cookie to thicken the sauce.
