Start by preparing the dough for the layer.
In a bowl, combine 1/2 cup chickpea flour and 1/4 cup whole wheat flour.
Add a pinch of turmeric powder, salt, and a pinch of asafoetida; mix the dry ingredients.
Add 2 tablespoons of oil to the flour mixture and mix well.
Gradually add water to form a stiff dough, ensuring it is not too soft.
Coat the dough with a little oil and cover it; set aside.
Prepare the filling in the same bowl by mixing all the filling ingredients together.
Add dry coconut, poppy seeds, sesame seeds, coriander powder, cumin powder, garam masala, red chili powder, sugar, and a pinch of asafoetida.
Squeeze in about 1 teaspoon of lime or lemon juice and mix everything well.
Optionally, blend the mixture for a finer texture if desired.
Taste the filling and adjust seasoning as needed.
Once the dough has rested, take a ball larger than a golf ball and roll it out into a thin layer.
Spread the filling evenly over the rolled dough, pressing it down gently.
Moisten the edges with lime or lemon juice or water to help seal it.
Roll the dough tightly into a log, ensuring the filling is enclosed.
Cut the log into small discs for baking or frying.
