Mix 2 cups of besan flour and 1 cup of atta in a bowl.
Add 1-2 tablespoons of oil, hing powder, turmeric, salt, and chili powder; mix until crumbly.
Add water gradually to form a stiff dough, similar to poori dough; rest for 10 minutes.
Roll out the dough into a sheet.
Spread the masala mixture (fennel seeds, peppercorns, cumin seeds, sesame seeds, coriander seeds, poppy seeds, sugar, amchur powder, and grated coconut) evenly over the dough.
Roll the dough tightly into a log, sealing the edges with water.
Rest the rolled log for 2-3 minutes before cutting into roundels.
Cut the log into even roundels for uniform cooking.
Fry the roundels in oil at a lower temperature for 7-10 minutes until golden brown.
