Add minced garlic and chopped onion; sauté until fragrant, about 2-3 minutes.
Stir in diced carrots and green peas; cook until tender, about 3-4 minutes.
Add cooked rice, breaking up any clumps; stir-fry for 2-3 minutes until heated through.
Incorporate crab paste, mixing well to coat the rice evenly.
Drizzle soy sauce over the rice; stir to combine and enhance flavor.
Season with salt and pepper to taste; continue to stir-fry for another 2 minutes.
Push rice to the side of the skillet; crack an egg into the empty space.
Scramble the egg until just set, then mix into the rice.
Fold in chopped green onions just before serving.
Serve hot, garnished with additional green onions if desired.
