½ cup panko breadcrumbs
1/3 cup coconut milk
400g (14 oz) chicken mince
2 tbsp Thai red curry paste
6 makrut lime leaves, de-stemmed and finely sliced
2 tbsp fish sauce
2 sheets (25cm x 25cm) puff pastry
4 egg yolks, lightly whisked
black sesame seeds
1/3 cup sweet chilli sauce
1 tbsp diced cucumber
1 tbsp finely diced red Asian shallots (or red onion)

Combine the panko breadcrumbs and coconut milk in a small bowl. Set aside for 2-3 minutes to soften.
