1

Grind 3/4 pound of pork loin using a grinder attachment on a mixer.

2

Cut a baguette into pieces and pulse in a blender to make about 1 and 1/2 cups of soft bread crumbs.

3

Soak the bread crumbs in 1 cup of half-and-half for about 10 minutes.

4

Chop half of a large onion to make about 1/2 cup and blend it until finely minced.

5

Saute the minced onion in about 1 tablespoon of butter until softened and moisture is reduced.

6

In a mixing bowl, combine the ground pork, 1 pound of lean ground beef, soaked bread crumbs, minced onion, 1/4 cup of parsley, 1 egg, 1 teaspoon of ginger, 1 teaspoon of nutmeg, and 1 and 1/2 teaspoons of hickory smoked salt.

7

Mix the ingredients until fluffy and tacky.

8

Portion out the meat mixture into meatballs using a 2 tablespoon scoop.

9

Brown the meatballs in a skillet with a couple tablespoons of butter, working in batches to avoid overcrowding.

10

Remove the browned meatballs and prepare a roux with butter and flour in the same skillet.

11

Add beef stock to the roux to create a thinner gravy consistency.

12

Add Oakridge Jala Jamaican Jerk seasoning to the gravy for added spice.
