Besan Peda

1 cup besan (gram flour)
1/2 cup sugar
1/4 cup ghee (clarified butter)
1/4 cup milk
1/2 tsp cardamom powder
1/4 cup chopped nuts (almonds, pistachios)
1/4 tsp saffron strands (optional)

In a pan, heat the ghee on medium heat.

Add the besan to the pan and roast it, stirring continuously until it turns golden brown and aromatic.

Reduce the heat and add the sugar, mixing well until it dissolves completely.

Pour in the milk gradually, stirring continuously to avoid lumps.

Add the cardamom powder and saffron strands (if using), and mix well.

Continue to cook the mixture until it thickens and starts to leave the sides of the pan.

Remove the mixture from heat and let it cool slightly until it is manageable to handle.

Grease your hands with a little ghee and take small portions of the mixture to shape into small round balls or discs.

Roll the pedas in chopped nuts for garnish, if desired.

Place the pedas on a plate and let them cool completely before serving.
