Originating from Central Asia, Shurpa is a traditional dish that has been cherished for centuries, particularly in Uzbekistan. This hearty soup, made with lamb and vegetables, reflects the nomadic lifestyle of the region, where such meals provided sustenance for long journeys. Today, Shurpa is enjoyed in various forms across many cultures, often adapted with local ingredients, making it a beloved comfort food worldwide.

Chop the onions in semi circles.
Chop the tomatoes and carrot into medium pieces.
If adding beans, soak them in cold water mixed with 1 teaspoon of baking soda overnight.
Place the meat in a pot with cold water and start boiling on high flame; remove all the foam that forms until cooking is finished.
Once the meat is boiled for about 1 hour, add all the vegetables including the beans and continue simmering for another 3-5 hours.
After boiling, add the peeled potatoes and continue to simmer for another 20-30 minutes until they are ready.
Season with salt, pepper, or vegeta to taste after adding the potatoes.
Remove all the ingredients onto a separate plate and chop some fresh onions on top, leaving the beans and broth in the pot.
Serve the soup while hot.
