Falafel

Today, falafel is enjoyed worldwide, with variations in spices and serving styles reflecting local tastes.

1 cup chickpeas
15-18 garlic cloves
4-5 green chilies
salt to taste
fresh coriander (or parsley)
1 chopped onion
1 teaspoon black pepper
1 teaspoon roasted cumin powder
2 pinches baking soda
1 teaspoon chili flakes
oil for frying

Rinse 1 cup of chickpeas and soak them in water for at least 7-8 hours.

After soaking, rinse the chickpeas again.

In a chopper, add the soaked chickpeas.

Add 15-18 garlic cloves, 4-5 green chilies, and salt to taste.

Grind the mixture without adding water until it's coarsely ground (not a fine paste).

Add a generous amount of fresh coriander (or parsley) and 1 chopped onion to the mixture.

Add 1 teaspoon black pepper and 1 teaspoon roasted cumin powder, and mix well.

Add 2 pinches of baking soda and 1 teaspoon chili flakes to the mixture.

Form small patties from the mixture and press them slightly.

Heat oil in a pan until hot, then add the patties.

Fry the patties on high flame until they turn golden brown.
