1

Start by preparing the fish; use a whole sea bass or any hardy white flaky fish.

2

In a pot, add water, a little onion, whole parsley, lemon, salt, and the whole fish to make the broth.

3

Add a clove of garlic to the pot with the fish and let it simmer.

4

While the fish is cooking, cut the potatoes into small cubes and peel and chop the tomato.

5

Add orzo pasta to the pot; traditionally, star pasta is used but orzo is a good substitute.

6

After about 15 minutes, remove the fish from the pot and let it cool down.

7

Strain the broth and set it aside.

8

In a pan, heat olive oil and sauté chopped onions until they render down.

9

Add the chopped tomatoes to the pan and let them cook with the onions.

10

Season the mixture with paprika, saffron, and turmeric, mixing well to release the spices' aroma.

11

Chop parsley and add it to the sautéed vegetables for extra flavor.

12

Once the fish has cooled, remove the meat from the bones carefully, ensuring no bones remain.

13

Add the strained fish stock to the pan with the sautéed vegetables and spices.

14

Add fish bouillon or chicken bouillon to enhance the flavor.

15

Stir in the orzo pasta and bring the mixture to a boil before reducing to a simmer.

16

After the soup has simmered for 15-20 minutes, add the cooked fish back into the pot along with a little tomato paste for sweetness and color.

17

Let the soup simmer on low heat for another 15-20 minutes.
