Prepare the dough for paratha by taking 500 grams of all-purpose flour in a bowl.
Add 1/2 teaspoon salt, 1 tablespoon sugar, 2 pinches baking powder, and 2 tablespoons ghee to the flour.
Mix all the ingredients well into the flour.
Gradually add normal water to knead the dough until it becomes soft, avoiding adding too much water at once.
Once the dough is ready, brush some oil on it to prevent it from drying out and cover it to rest for 15 to 20 minutes.
While the dough is resting, prepare the chicken patty mixture by adding 500 grams of boneless chicken pieces to a chopper.
Add 2 small roughly chopped onions, green chilies to taste, and 1 tablespoon ginger-garlic paste to the chopper.
Add 1 tablespoon coriander powder, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/2 teaspoon roasted cumin powder, and 1 tablespoon salt to the chicken mixture.
To make the patty soft, add 1 tablespoon ghee (or mayonnaise) to the mixture.
Add 1 tablespoon red chili flakes and one broken slice of bread for binding.
Mix and chop all the ingredients together until the chicken is finely minced into a paste-like consistency.
Transfer the mixture to a bowl and refrigerate it until the paratha is ready.
After 20 minutes, knead the dough again and divide it into equal-sized balls, applying oil to prevent drying.
Take one ball and flatten it on a working surface, stretching it out to the desired size using oil or flour.
Cut the flattened dough into thin strips using a pizza cutter to create layers for the paratha.
Gather the strips and twist them together to form a rope, then roll it into a circular shape, pressing lightly to create layers.
Repeat the process for the remaining dough, applying oil to each layer to keep them from drying out.
Heat a cast iron skillet and flatten one rolled paratha on the surface, stretching it if it shrinks during cooking.
Fry the paratha on medium flame, flipping and pressing lightly until both sides are golden and crispy.
Remove the fried paratha from the skillet and repeat the process for the remaining parathas, ensuring they are all golden and crispy.
For the chicken patty, scoop the chicken mixture and shape it into a flat patty, slightly larger than the paratha to account for shrinkage during cooking.
Place the patty on the hot skillet, drizzle with a little oil, and cook on high flame for 2-3 minutes, flipping occasionally.
Add sliced onions to the skillet to caramelize alongside the patty, stirring them occasionally.
Once the chicken patty is cooked, place a cheese slice on top to melt.
Assemble the burger by taking one paratha, spreading mayonnaise and any preferred sauce on it.
Place the hot chicken patty on top, followed by another patty if desired, and add more cheese and caramelized onions on top.
Cover with another paratha to complete the burger.
