Dry roast 1 teaspoon cumin, 1 tablespoon coriander seeds, and 1 teaspoon black pepper in a pan over low flame until fragrant.

Let the roasted spices cool, then grind them into a coarse powder.

Chop 1 medium onion and 8-10 green chilies, then blend them into a rough paste.

In a kadhai, heat 1 cup oil until hot.

Add whole spices: 3 cardamom pods, 4 cloves, 1 stick of cinnamon, 1 black cardamom, and 10 black peppercorns, and fry for 1 minute.

Add 750 grams of beef (with some bones) to the hot oil and sauté until browned, about 3-4 minutes.

Add 2 teaspoons of ginger-garlic paste and sauté for an additional 2 minutes until fragrant.

Add the onion and green chili paste to the beef and cook until the onions are well cooked, about 3-4 minutes.

Stir in the ground spice powder, reserving 1 tablespoon for later use, and add 2 pinches of turmeric, cooking for 1 minute.

Add 1 glass of water, cover, and cook until the beef is tender.

Once the beef is tender, add 1 teaspoon of salt and 1 cup of yogurt, stirring until the oil begins to separate, about 3-4 minutes.

Add the reserved spice powder, 1/2 teaspoon of garam masala, and mix well.

Stir in 1 tablespoon of lemon juice and add 2 finely chopped green chilies and some chopped cilantro.

Let it simmer on low heat for 2 minutes, then add a light smoke from coal to enhance the flavor.
