Stuffed Mushrooms

100 g ricotta cheese
100 g semi-dried tomatoes
1/4 cup grated cheddar cheese
1 egg
olive oil

Preheat the oven to 180° C.

Line a baking tray with non-stick baking paper.

Remove the stalks from 10 small mushrooms and brush each with olive oil.

In a mixing bowl, combine 100 g of ricotta cheese, 100 g of chopped semi-dried tomatoes, chopped fresh basil, 1/4 cup of grated cheddar cheese, 1 egg, salt, and pepper.

Mix the filling until smooth.

Stuff the mushrooms with the mixture, creating a mound on top of each mushroom.

Place the stuffed mushrooms on the baking tray and bake in the preheated oven for about 20 minutes or until the mushrooms are cooked and the tops are golden.

Allow the stuffed mushrooms to cool for a few minutes before serving.
