3 medium onions
6 cloves garlic
2 bay leaves
1 heaped teaspoon cumin

Soak 500 grams of black beans overnight and drain them to remove any grit.

In a pressure cooker, heat oil (about 4 tablespoons) for sautéing.

Add 3 sliced medium onions to the heated oil and sauté for about 4 minutes until softened without color.

Add 6 crushed and finely chopped cloves of garlic and 2 bay leaves to the onions and sauté until fragrant.

Add the soaked black beans to the pot along with water and salt to taste.

If not using a pressure cooker, simmer on low for about 45 minutes until beans are soft.

If using a pressure cooker, secure the lid and cook for about 45 minutes, waiting for 3 clicks to indicate pressure is reached.

After 45 minutes, allow the pressure to release slightly before opening the lid to reveal a gelatinous black bean mixture.
