Today we are making a special traditional recipe for Diwali, Suvali.

I have taken two bowls for different measurements.

In the larger bowl, add 2 cups of flour.

In the smaller bowl, mix 1 cup of sugar with 1/2 cup of water and 1/2 cup of oil.

Heat the mixture on low flame, stirring continuously until the sugar dissolves; do not make syrup, just warm it up.

Once the sugar is dissolved, let the mixture cool down.

In the flour bowl, add a pinch of salt and roasted sesame seeds (optional).

Mix the flour, salt, and sesame seeds well.

Slowly add the sugar-water mixture to the flour, mixing gradually to form a stiff dough.

Knead the dough for about 5-7 minutes until it becomes pliable.

Cover the dough and let it rest for 15 minutes.

After resting, the dough will have a shiny appearance.

Grease your hands with a little oil to prevent sticking.

Divide the dough into small balls, making them uniform in size.

Roll out each ball into thin discs, ensuring they are transparent.

Heat oil in a kadai over medium heat for frying.

Fry the discs one by one, ensuring they do not stick together.

Once bubbles form, flip the disc to fry evenly.

Fry until golden brown and crispy, then remove and place on paper to absorb excess oil.

Repeat the frying process for all discs.
