Mince 30 g each of ginger and garlic finely.

Chop 2 large green onions (70 g), slicing the white/light green parts and adding them to the ginger and garlic.

In a pan over medium-high heat, add 1 lb of ground pork and cook until the liquid is running clear, about a couple of minutes.

Add 1/2 cup of peas (optional) and deglaze the pan with 4 oz of rice wine.

Add 1 liter of chicken stock, 2 tbsp of soy sauce, a couple pinches of white pepper, and some MSG; simmer for about 3 minutes.

In a bowl, mix 1 tbsp of cornstarch with 1 tbsp of cold water, then pour it into the pan to thicken the sauce.

Add 1 lb of shrimp to the sauce and mix to submerge them.

In another bowl, mix 1 egg, 1 tsp of sesame oil, some salt, and white pepper; slowly pour it around the pan to cook in the sauce.

Add 80% of the green onion tops and cook for 30 more seconds.

Check for seasoning and garnish with the rest of the green onions and a few drops of sesame oil.
