Beat 1 egg in a bowl.

Prepare a cornstarch and water mixture by mixing cornstarch with cold water until there are no clumps.

Add oil to a hot pan over medium-high heat and pan-fry the shrimp, spreading them out until the bottom is golden; turn them over to pan-fry the other side until golden.
