Egg Roll in a Bowl

3-4 wonton wrappers per person
vegetable oil
half of a small savoy cabbage
1 carrot
red pepper (optional)

rice vinegar
sake or white wine (optional)

cayenne pepper
white pepper or black pepper
ketchup
corn starch
1/2 pound ground pork

Cut 3-4 wonton wrappers per person into approximately quarter inch strips.

Transfer the strips to a pan and drizzle with vegetable oil, tossing to coat.

Spread the wonton strips evenly on the pan.

Bake in a 350 degree oven for about 12 minutes or until browned.

While the wonton strips bake, prepare the vegetables: cut half of a small savoy cabbage in half, then quarter it and trim off the core.

Slice the cabbage thinly to create shredded cabbage and transfer to a bowl.

Using a mandolin or potato peeler, prepare 1 carrot into matchsticks or peels.

Optionally, julienne some red pepper and slice green onions, and mince garlic if desired.

Prepare the sauce by mixing soy sauce, rice vinegar, sake or white wine (if using), sesame oil, white sugar, grated ginger, cayenne pepper, white or black pepper, ketchup, and corn starch until dissolved.

In a skillet over medium-high heat, add 1/2 pound of ground pork and break it up as it browns, no oil needed.

Once the pork is browned, add the vegetable mixture and mix carefully with tongs, cooking for 1-2 minutes until vegetables are just starting to soften.

Stir in the sauce and cook for one more minute until everything is ready.

Transfer the mixture to a bowl and top with crispy wonton strips and optional sliced green onions.
