Egg Roll in a Bowl

4 scallions

4 cups coleslaw mix
2 tablespoons coconut aminos
2 tablespoons low-sodium soy sauce

Chop 4 scallions, separating the white and green parts.

Mince 4 cloves of garlic.

Peel 2 inches of fresh ginger using the back of a spoon and grate it with a microplane.

Heat a skillet over medium-high heat and add 1 tablespoon of avocado oil.

Add the white parts of the scallions to the pan, followed by the minced garlic and grated ginger. Stir until fragrant.

Push the aromatics to the edge of the pan and add 1 pound of ground pork, breaking it up and cooking until golden brown.

Chop the green parts of the scallions for garnish while the pork cooks.

Once the pork is nearly done, add 4 cups of coleslaw mix to the pan and cook until wilted but still crunchy.

Turn off the heat and stir in 2 tablespoons of coconut aminos and 2 tablespoons of low-sodium soy sauce, followed by 1 tablespoon of sesame oil.

Stir in the chopped green parts of the scallions and serve in bowls, garnished with sesame seeds and cilantro.
