Fried Eggs

Blend 2 tata shea, 3 small tomatoes, 1 small onion, and 2 habanero peppers in a food processor with a little bit of water until roughly blended.

Heat ground nut oil in a pan.

Add garlic ginger onion paste and green paste to the oil and fry until aromatic.

In a bowl, crack 3 eggs and mix in a pinch of sea salt, holy spirit spice, and kika sweya spice.

Add the blended pepper mixture to the eggs and stir, making sure not to let it set too much while cooking.

Pour the egg sauce into the heated oil and cook until done, then switch off the gas and remove from heat.

For plain fried eggs, whisk eggs with sea salt, holy spirit spice, black pepper, thyme, and a tiny bit of water.

Heat ground nut oil in a pan and pour in the egg mixture, covering the pan to create steam while cooking.

After cooking, flip the eggs to brown them on both sides, then switch off the gas and remove from heat.

For sunny side up, melt butter in a pan over low heat and crack the eggs in.

Sprinkle black pepper and sea salt on top, then add water around the edges of the eggs and cover the pan.

Cook for about 3 minutes until the yolks are cooked through and the water has evaporated, then remove from heat.
