Thai Pan Fried Eggs

Cultural Context

Originating from Thailand, Khai Jiao is a beloved street food often enjoyed for breakfast or as a quick meal. This dish exemplifies the Thai culinary philosophy of balancing flavors and textures, with the crispy edges and soft center of the eggs. Today, variations can be found in many Thai restaurants worldwide, often served with a side of chili sauce and lime for added zing.

fish sauce

🥗Healthier: soy sauce

Soy sauce is lower in sodium and provides umami flavor.

💰Cheaper: canola oil

Coconut oil adds flavor and is healthier.

chili sauce

🥗Healthier: sriracha

💰Cheaper: hot sauce

Sriracha offers a similar heat with fewer additives.

Chives are milder and provide a fresh taste.

1

Slice Chinese sausage and Vietnamese ham (quantity to your liking).

2

Add little oil to a pan over medium heat. Sear the Chinese sausage and Vietnamese ham. Stir to lightly brown both sides and set aside.

3

Add little oil to a pan over medium heat. Add onion and cook until it becomes translucent. Stir from time to time. Add garlic and cook until fragrant.

4

Add pork. You can use other kind of meat if you like. Break apart the ground pork as it cooks. Pour in Maggi seasoning sauce and oyster sauce. Mix well. Add black pepper to taste and half of a spring onion.

5

Place the serving pan over medium low heat. Melt the butter and pour in the eggs. Once the egg whites start to cook add the sausage and ham. You can add the pork now, but I like to add almost before finishing.

6

Cover the pan and cook until the egg yolk is done to your liking. Add the pork and black pepper to taste. Garnish with spring onion. Serve with hot sauce or Maggie seasoning sauce.
