250 g fresh wide rice noodles
125 g boneless chicken legs
2 cloves garlic
3 stalks Chinese broccoli (Gai lan)
1 egg
1 tbsp oyster sauce
3 tsp thin soy sauce
2 tsp fish sauce
1 tsp golden mountain sauce
1 tsp black soy sauce
2 tsp sugar
1/2 tsp white pepper
2-3 thai chilis
1 clove garlic
60 ml white vinegar

Slice the thicker stems of the Chinese broccoli thinly on the diagonal, and cut the thinner stems and leaves into larger pieces.

Roughly chop the garlic.

Cut the chicken into bite sized pieces and marinate with 1 tsp thin soy sauce.

Combine oyster sauce, thin soy sauce, fish sauce, golden mountain sauce, black soy sauce, white pepper and sugar and stir to combine.

To make Prik Nam Som (Thai chili vinegar), pound the chilies and garlic into a paste using a mortar and pestle. Transfer the paste to a small jar or bowl and pour vinegar over it.

Heat up a wok or pan on high heat and put in 2-3 tbsp of cooking oil.

Add the chicken to the wok, spread it out in an even layer and press it down lightly. Let it sear for 1 minute, then stir-fry for another minute until cooked through. Then remove it from the wok and set it aside.

Pour in another 2-3 tbsp of oil.

Add the garlic and stir fry for 10 seconds.

Crack in the egg and stir fry for 10 more seconds.

Add the Chinese broccoli and stir fry for 30 seconds.

Add the rice noodles and pour the sauce over them. Toss everything together until the noodles are fully coated in the sauce.

Spread everything out in an even layer and let it sear for a few seconds (about 30 seconds) to get a good char. Then toss or flip everything to the other side and repeat.

Put the chicken back in and stir until everything is mixed together.

Turn off the heat and serve with Prik Nam Som (Thai chili vinegar) on the side.
