Smash garlic and chop it.
Prepare a vegetarian sauce using equal parts thai soy sauce and golden mountain sauce, adding black soy sauce for color separately.
Drain the noodles and cut them to make tossing easier.
Heat a non-stick wok and add garlic to infuse into the oil.
Once garlic is golden, add eggs and scramble until fully cooked before adding noodles.
Add the soaked noodles and toss quickly to heat them up.
Add sauces and a splash of water, adjusting the amount based on noodle brand.
Add sugar to balance the flavors and toss until absorbed.
Add black soy sauce for color and toss gently to avoid breaking the noodles.
Add vegetables and season with white pepper, cooking until just wilted.
