2 tbsp Flour
2 tbsp Cornstarch
2 tbsp Gram Flour
1 tsp Chilly Powder
1 tsp Garam Masala
1 tsp Cumin Powder
1 tsp Pepper Powder

Combine all of the remaining ingredients in a mixing dish. Mix everything together quickly. Gradually add water to produce a medium thick batter.

Add mushrooms and mix carefully to avoid breaking the mushrooms. It is necessary for the batter to be thick. If the batter isn't thick enough, it will break apart when frying since mushrooms leak moisture as they cook. As a result, ensure that the batter is thick.

Allow the oil to heat up to a medium temperature. Drop the mushrooms into the heated oil with care. The oil must be quite hot. The mushrooms will absorb more oil if the oil is not heated.

Turn each mushroom over until one side is golden and crisp. Fry the second side until golden and crisp. For even cooking, turn the pan over a couple of times more.

With a slotted spoon, drain the excess oil from the cooked mushrooms. Continue to fry the remaining mushrooms in the same manner.

Fry some curry leaves in the same oil and toss on to the mushrooms for extra flavor.
