3-4 cloves garlic
2 bay leaves
1 teaspoon thyme, dried
1 teaspoon rosemary, dried
¼ teaspoon ground black pepper
½ teaspoon salt
3 tablespoons olive oil
1 vegetable stock cube
½ pint (240 ml) water
1 large onion
2 medium carrots
3 medium potatoes (preferably red potatoes)

Allow the leg of lamb to sit at room temperature for approximately 30 minutes.

Cut a large onion into rings and use it to line the bottom of the slow cooker dish. Drizzle with 1 tablespoon of olive oil.

Peel and cut potatoes and carrots into 2 to 3 inch chunks, then peel garlic cloves. Place these ingredients into a large bowl, add a sprinkle of salt and pepper and 1 tablespoon of olive oil. Mix and set to one side for later.

Bring water to boil, pour ½ pint (240 ml) into a mixing jug. Add in a vegetable stock cube and stir until dissolved.

Into a separate large bowl, add ½ teaspoon salt, ¼ teaspoon pepper, 1 teaspoon rosemary, and 1 teaspoon thyme. Pour in 1 tablespoon olive oil and mix to combine the ingredients.

Place leg of lamb into the bowl and coat all sides with the herb mix.

Transfer the lamb onto the onions in the slow cooker dish.

Pour the vegetable stock into the dish. Add the bay leaves.

Cook on high (between 200-225°F) for 3 HOURS.

Add the garlic cloves, potatoes and carrots into the slow cooker dish and replace the lid. Continue to cook on high for a further 2 HOURS.
