Clean the beef trotters thoroughly under running water.
Soak the trotters in water for 1-2 hours to soften them.

Stir in minced ginger and garlic, cooking for 1-2 minutes until fragrant.
Add chopped tomatoes and cook until they break down, about 5 minutes.
Mix in coriander powder, cumin powder, turmeric powder, and red chili powder, cooking for 2-3 minutes.
Add the beef trotters and stir to coat them in the spice mixture.
Pour in enough water to cover the trotters and bring to a boil.
Reduce heat to low, cover, and simmer for 4-6 hours until the trotters are tender.
Stir in yogurt and cook for an additional 10 minutes.
Add garam masala and salt to taste, cooking for another 5 minutes.
Garnish with fresh coriander and serve with lemon wedges.
