Blend chopped onions, fresh garlic, all spice, thyme, green onions, scotch bonnet pepper, fresh ginger, and some water to make green seasoning.

Wash 3 lbs of goat meat and add olive oil, salt, black pepper, and all spice to it.

Massage the blended green seasoning into the goat meat and add 2 tablespoons of curry powder, mixing well.

Set the marinated meat aside to marinate.

Heat vegetable oil in a pan over medium heat and add 1 tablespoon of curry powder to toast it in the oil.

Add chopped onions and garlic to the pan to flavor the oil, cooking for about 2 minutes.

Add the marinated goat meat to the pan, stirring well and covering it for about 5 to 10 minutes to achieve a golden color.

After 10 to 15 minutes, add ½ to ¾ cup of hot boiling water to the pan and stir.

Cover the pan and transfer it to the oven to cook for about 45 minutes with minimal water.

While the goat is in the oven, prepare veggies: chop Irish potato, carrots, and bell peppers.

After 45 minutes, check the goat meat for tenderness on the stovetop.

Add freshly squeezed coconut milk and more of the green seasoning blend to the pot.

Add the prepared veggies, including Irish potato, carrots, scotch bonnet pepper, chopped onions, green onions, and fresh thyme.

Season with all-purpose seasoning, black pepper, all spice, and Mrs Dash, adjusting to taste.

Cook for another 10 minutes, checking the gravy consistency until thick and rich.

Add sweet peppers for extra flavor before serving.
