Chicken is lower in fat and cost-effective.
Turn on the Instant Pot and set it to the sauté setting; add a little bit of olive oil.
Chop the onion and tomato; add them to the Instant Pot with black pepper to build flavor.
Break down the vegetables, especially the tomato, to create a base for the curry.
Add curry powder to the Instant Pot early to infuse its flavor into the oil.
If the curry looks dry, add more olive oil to help break down the vegetables.
Add garlic powder and onion powder to the base to infuse flavors.
Stir the mixture with a wooden spoon to gather flavors and prevent sticking.
Add a splash of water to deglaze the bottom of the Instant Pot, picking up cooked spices.
Add thyme leaves to the mixture for flavor.
Add white pepper and all spice to the curry base.
Stir the curry base to blend the flavors together.
Add chicken bouillon and adjust the spice level with pepper; note that scotch bonnet was not used due to unavailability.
Add Maggi seasoning to the curry base.
Add cubed goat meat to the Instant Pot and coat it in the curry base.
Add about 4 cups of water to the pot.
Set the Instant Pot to cook on the meat setting at high pressure for 40 minutes.
Perform a quick release after 40 minutes and then add potatoes to the pot.
Pressure cook again for another 10 minutes to tenderize the potatoes.
Serve the curry goat over a bed of white rice.
