1/2 large tomato
1 teaspoon salt
1/4 teaspoon black pepper
2.5 to 3 cups water
1 teaspoon anti masala (optional)

Chop 1 medium onion and 6 cloves of garlic thinly.

Roughly chop 1 scallion (green onion) and add to a bowl.

Bruise and add 4 sprigs of fresh thyme to the bowl.

Chop 1 scotch bonnet pepper (remove seeds if concerned about heat) and add to the bowl.

Add 2 tablespoons of Caribbean style Madras curry and 1 teaspoon of salt to the bowl.

Add 1/4 teaspoon of black pepper to the bowl.

Roughly chop 1/2 large tomato and add to the bowl.

Stir all ingredients in the bowl to combine.

Marinate the goat meat with the mixture for at least 1 hour (preferably 2 hours).

Heat 2 tablespoons of vegetable oil in a pot over high heat.

Add the sliced onion and garlic to the pot and reduce heat to low; cook for 2-3 minutes until fragrant.

Increase heat to medium-high and add 2 tablespoons of curry powder to the pot; stir well.

Add the marinated goat meat to the pot and stir to coat with the oil and spices.

Add 2.5 to 3 cups of water to the pot, enough to cover the meat.

Bring to a boil, then reduce heat to low and cover; simmer until the meat is tender (about 1.5 to 2 hours).
