Heat a touch of sunflower oil in a pan over high heat.
Add dried chili, star anise, and white pepper to the pan.
Add chunky cuts of lamb to the pan and brown for 4-5 minutes.
Add about 2 teaspoons of finely chopped garlic and ginger to the pan.
Stir in 3 tablespoons of brown sugar and a splash of soy sauce.
Add chopped onion to the mixture.
Pour in the water from the rehydrated mushrooms and bring to a boil.
Reduce heat to a rolling boil and cook for about 30 minutes, stirring often.
Add the rehydrated mushrooms to the pot and cover.
Cook on low heat for another 20 minutes until the lamb is tender.
