Season the lobster and shrimp with salt and cream seasoning; set aside to marinate for 12 to 15 minutes.
Season the rice with salt, cook up seasoning, frozen pigeon peas, green seasoning, chopped onions, chopped tomatoes, scallion, chopped carrots, chopped bell pepper, chopped fermented wrappers, and chopped celery; mix well.
Grate garlic on top of the rice mixture and mix in.
Heat a pot over medium heat and add sugar; caramelize until it reaches a dark amber color.
Add the seasoned rice to the pot and mix it in with the caramelized sugar.
Add enough water to cover the rice and greens, along with one packet of coconut milk powder; mix well and add more water if needed.
Cover the pot and let it simmer, checking every 10 minutes to ensure it has enough water and doesn't stick to the bottom.
When the rice is almost done, add in the marinated seafood and mix well; cover and cook for 3 to 5 minutes until the seafood is cooked through.
Taste and adjust salt if necessary before plating.
