Bloom the gelatin by mixing 120 g of cold whole milk with 12 g of gelatin powder in a medium-sized jug and let it sit for at least 5 minutes.

In a medium saucepan over medium-low heat, combine 120 g of whole milk, 480 g of heavy cream, 80 g of sugar, and 1 1/2 teaspoons of vanilla or one whole vanilla pod. Stir well and heat until it starts to gently bubble, then remove from heat immediately.

Let the cream mixture cool for about 5 minutes before adding it to the bloomed gelatin to prevent losing gelatin strength.

Slowly pour the cooled cream mixture into the bloomed gelatin while continuously mixing until the gelatin is completely dissolved.

If using vanilla pods, strain the mixture to remove any bits after the gelatin is dissolved.

Place the jug or bowl over ice cold water and mix occasionally until the panna cotta mixture is cold to the touch and slightly thickened.

Lightly grease 4 ramekins (3.5 inches or 6 oz) with unflavored vegetable oil and pour the panna cotta mixture into them. Tap the ramekins lightly on the counter to remove any large air bubbles.

Cover the tops of the ramekins with cling wrap to prevent odors from the fridge and refrigerate for a minimum of 4 hours or overnight to set.

To make the berry sauce, place a small saucepan over medium heat and add 210 g of frozen berries, 50 g of sugar, and 3/4 tablespoon of lemon juice. Stir and bring to a gentle simmer until the berries soften and the mixture thickens.

Transfer the berry sauce to a bowl or container to cool.

To demold the panna cotta, run a sharp knife around the top edge to break the seal, place the ramekin in hot water for about 5 seconds, then flip it onto a saucer. If it doesn't come out, return it to hot water for a few seconds and try again.

Serve the panna cotta with the cooled berry sauce on top.
