Add 1/8 cup of cold water to a bowl.

Sprinkle 1 teaspoon of unflavored powdered gelatin evenly over the water and let it bloom for about 15 minutes.

In a small pot, add 1 cup of heavy cream and 2 tablespoons of granulated sugar.

Heat the mixture on medium heat, whisking gently until the sugar dissolves and the cream is steaming, but not boiling.

Add 1/2 teaspoon of pure vanilla extract and whisk it in.

Add the bloomed gelatin to the cream mixture and whisk until dissolved.

Pour the cream mixture into two small glasses and cover with saran wrap.

Place the glasses in the fridge to set for about 4 hours.

To make the raspberry gel, add 1 tablespoon of cold water to a bowl and sprinkle 1 teaspoon of gelatin over it to bloom.

In a small saucepan, add 1/2 cup of fresh raspberries, 1 tablespoon of sugar, and a small bit of water.

Stir over medium heat until the raspberry cells burst and release their juices.

Add 1/8 teaspoon of vanilla extract and a small squeeze of lemon juice to the mixture.

Strain the mixture through a fine sieve to get the raspberry puree, using a silicone spatula or small ladle to push it through.

Add the bloomed gelatin to the warm raspberry puree and mix until dissolved.

Remove the panna cottas from the fridge and take off the saran wrap.

Add the raspberry gel on top of the panna cotta and cover with saran wrap again.
