Oven Baked Lamb Chops with Homemade Mint Sauce

Finely chop the rosemary, mint, and thyme.
In a small bowl, mix the chopped herbs with olive oil, lemon juice, lemon zest, salt, and cumin.
Rub both sides of the lamb chops with the marinade.
Let the lamb chops sit in the refrigerator for at least an hour.
In a bowl, add yogurt, garlic, chopped mint, lemon, sugar, salt, pepper, and extra virgin olive oil.
Whisk or stir everything together for the mint yogurt.
Refrigerate the mint yogurt until ready to use if desired.
Bring potatoes to a boil in a large pot of salted water, then simmer for 10 minutes.
Remove the potatoes from the water and let them cool before cutting them in half.
Trim the ends off the green beans, then add them and the carrots to the simmering water and cook for about 7 minutes before draining.
Cut the bell peppers in half lengthwise, remove the seeds, and cut in half lengthwise again.
Remove the lamb from the refrigerator about half an hour before cooking to let it rest at room temperature.
Fire up the Ooni pizza oven and preheat it to about 300 degrees Celsius (575 degrees Fahrenheit).
Use an infrared thermometer to check the oven temperature.
Brush the dual sided grizzler with oil and place it in the oven to heat up.
Remove the grizzler from the oven and spread the potatoes, carrots, beans, and peppers on top.
Bake the vegetable medley in the oven for about 15 to 20 minutes, turning carefully every five minutes.
Once cooked, remove the vegetables from the oven and place them on a large serving dish, seasoning to taste with salt and pepper.
Place the lamb chops on the dual sided grizzler and grill them for 2 to 3 minutes a side for medium rare, 3 to 4 minutes a side for medium, and 5 minutes per side for well done.
Serve the lamb chops on top of the grilled vegetables with the mint yogurt dip.
