Whole Shrimp and Pork Dumplings

Originating from the northern regions of China, dumplings are a staple in Chinese cuisine, especially during festivals and family gatherings. They symbolize wealth and prosperity, as their shape resembles ancient Chinese gold ingots. Today, variations exist worldwide, with fillings ranging from meat to vegetables, showcasing the dish's adaptability and global appeal.

Whole wheat wrappers offer more fiber, while wonton wrappers are usually less expensive.
Cut 200 grams of pork loin into pieces.
Chop the pork into smaller pieces and place it in a mixing bowl.
Mince 100 grams of green onion and add it to the bowl with the ground pork.
Chop 1 garlic clove and add it to the bowl.
Grate a piece of ginger, about 0.5 teaspoon, and add it to the bowl.
Take a 250 grams piece of tofu, place it in a bag, squeeze to remove the water, and crumble it into the bowl.
Add 0.5 teaspoon of salt, some ground pepper, 1 tablespoon of sesame oil, 1 tablespoon of oyster sauce, and 1 tablespoon of light soy sauce to the bowl.
Add 1 tablespoon of cornstarch and mix all ingredients together until well combined.
Add the minced green onion to the mixture and mix again.
Prepare the shrimp by removing the tail and the intestinal vein, and notch them to prevent curling during cooking.
Place parchment paper in the steamer basket.
To assemble the dumplings, put a good teaspoon of stuffing in the center of the dumpling wrapper.
Humidify the outline of the wrapper with water.
Place a shrimp on top of the stuffing, fold the wrapper in half, and press on the edges to seal.
Make a few folds to give the dumpling a nice shape.
Place the dumplings in the steamer basket without touching each other.
Steam the dumplings over high heat for 20 minutes.
While the dumplings are steaming, prepare the dipping sauce by combining 2 tablespoons of light soy sauce, 1 tablespoon of black rice vinegar, and 1 tablespoon of sesame oil in a bowl.
Optionally, add chili oil to the sauce before serving.
