Chop 2 medium onions (350 grams) and squeeze out the water.

Use 1 kilogram of beef mince (20% fat) and mix with 4 tablespoons of thick yogurt, 1 tablespoon of salt, 3/4 tablespoon of red chili powder, 1/2 tablespoon of black pepper, 1 tablespoon of oregano, and 2 tablespoons of ginger-garlic paste.

Add the squeezed onions to the beef mixture and mix well.

Place the beef mixture on parchment paper and flatten it with your hands.

Cover with another piece of parchment paper and roll it thin with a rolling pin.

Roll the flattened mixture in the parchment paper and place it on a baking tray with red bell pepper, green chilies, and onions.

Preheat the oven to 400°F (200°C) and bake for 20-25 minutes.

Prepare the first sauce by mixing 1/2 cup of thick yogurt, 1/2 teaspoon of salt, 2 tablespoons of chili sauce, 1/2 tablespoon of white vinegar, 1/2 tablespoon of crushed red chili, and 1/2 teaspoon of ginger powder.

Prepare the second sauce by mixing 1/2 cup of thick yogurt, 5-6 tablespoons of mayonnaise, 2 teaspoons of fresh crushed garlic, 1/2 teaspoon of salt, fresh coriander, and 2 finely chopped cucumbers.

Prepare a Turkish-style salad by chopping 1 large onion and mixing it with fresh coriander, 2-3 tablespoons of lemon juice, 1/2 teaspoon of salt, and 1 tablespoon of sumac powder.

Once the kebabs are baked, break them into pieces and optionally boil them on high flame for 5 minutes to add color and crispness.

For serving, use whole grain pocket bread, add spicy sauce, kebab pieces, cabbage, and onion salad, and top with white sauce.
