1

Grind 1/2 onion and remove all water until dry.

2

In a bowl, combine 2 lbs ground meat (1 lb beef, 1 lb lamb), grated onion, 1/2 cup Greek yogurt, 3 cloves garlic, and all dry spices (red pepper, seven spices, black pepper, paprika, cumin, coriander, salt, oregano, garlic powder).

3

Add olive oil to the meat mixture to increase fat content.

4

Mix all ingredients thoroughly and place in a food processor.

5

Grind the mixture in the food processor until soft and well incorporated.

6

Cut parchment paper and lightly oil hands to prevent sticking.

7

Take a portion of the meat mixture and shape it between two pieces of parchment paper, rolling it into a log shape.

8

Place the shaped kebabs on a baking tray lined with parchment paper.

9

Bake the kebabs in the oven at 350°F for 20 minutes.

10

Prepare vegetables (onions, tomatoes) by tossing them with olive oil, salt, black pepper, paprika, parsley flakes, and oregano, then place them in the oven to bake.

11

Once the kebabs are done, remove them from the oven and peel off the parchment paper.

12

Cut the kebabs into small pieces and pan-fry them on high flame for a few minutes to get color.

13

Prepare wraps using almond tortillas, adding kebab pieces, tzatziki sauce, and optional vegetables (cucumbers, lettuce, onions, tomatoes).

14

Roll the tortillas to create wraps.
