Grind 1/2 onion and 4 cloves of garlic to a paste and strain out excess moisture.

Add 1 kilo of lean ground beef to a bowl.

Season the beef with salt to taste, 1 tbsp black pepper, 1 tbsp paprika, 1 tbsp cumin powder, 1 tbsp garlic powder, 1 tbsp dried oregano, 1 tbsp Aleppo pepper, 1 tbsp dried parsley, and 1/4 cup each of fresh parsley and dill.

Incorporate 1/4 cup of the ground onion and garlic paste into the beef mixture.

Add 1 tbsp of thick yogurt and 1 tbsp of red pepper paste to the mixture and mix well, massaging the ingredients together until cohesive.

Grab two sheets of parchment paper of the same size and spread the meat mixture onto one sheet, covering any spaces.

Place the second sheet on top and press down with your hands, then roll the meat into a thin sheet.

Roll up the parchment paper with the meat and place it on a baking tray.

Repeat the process until all the mixture has been rolled.

Preheat the oven to 350°F and bake the kebabs until cooked.

Remove from the oven and allow to cool, draining any juice and fat that comes out of the meat.

Optionally, tear the kebabs into pieces and sauté them in a frying pan or broil them for a few minutes for color.

Prepare the Arabic bread and spread garlic paste and red pepper paste on it.

Add the cooked donor meat, tomatoes (dehydrated or fresh), red onion tossed with lime juice and parsley, pickled turnips, and finish with fresh parsley and dill.

Roll up the bread tightly and serve, optionally warming it on the grill.
