Slice 300 g of beef sirloin tip into thin slices about an eighth of an inch thick.

Heat a wok over medium-high heat until you see a wisp of smoke, then add 1 tablespoon of avocado oil.

Add the beaten eggs to the wok and cook until set, then transfer back to the bowl.

Add another tablespoon of oil to the wok and add the marinated beef, searing for about 1 minute until browned on one side.

When the beef is 70-80% cooked, add the shallots and garlic, cooking for about 30 seconds before mixing the beef back in.

Add the prepared yellow noodles to the wok along with the sauce, ensuring the noodles are well coated.

Add the bok choy and cook until wilted, about 2 minutes.

Stir in the cooked eggs and some of the green onions, mixing everything together.
