Add 1 cup of frozen mixed berries to a hot saucepan.

Add 1/4 cup of sugar and 1/4 cup of water to the saucepan with berries.

Sieve the mixture to create a smooth puree, trapping seeds and skins in the sieve.

Reserve 3 tablespoons of the berry puree for topping later.

In a bowl, combine 1/2 cup of milk and 1 1/2 teaspoons of vegetarian gelatin; let it sit for about 2 minutes.

Add 1/4 cup of sugar to the milk and gelatin mixture and cook until the sugar is dissolved.

Remove from heat and stir in 1 cup of cream until combined.

Allow the panna cotta mixture to cool at room temperature.

Add the mixed berry puree to the panna cotta mixture and stir to combine.

Fill a measuring jug with the panna cotta mixture for easy pouring.

Pour the mixture into small cups and chill in the fridge for about 30 minutes until firm.

After 30 minutes, add some whipping cream on top of the panna cotta.
