Sweat the onions in a pan over medium heat for about 3-4 minutes until soft, ensuring the pan isn't too hot to avoid coloring the onions.
Add a little touch of salt and black pepper to the onions while sweating.
Add cauliflower florets to the pan and sweat them for 4-5 minutes until soft and flavors are released.
Add a piece of vegetable stock to the cauliflower and onions.
Pour in water to the pan and bring the mixture to a boil, which should take about 2-3 minutes.
Cover the pan with a lid and simmer for about 12-15 minutes until the cauliflower is nice and soft.
Transfer the soup mixture to a food processor and puree until smooth.
If the soup is too thick, add a touch of water to thin it down.
Pour the smooth soup into a hot bowl.
Garnish the soup with finely sliced parsley and basil, and drizzle with olive oil.
