Put on an apron and ensure hands are clean.
Prepare the ingredients: slice 3 sticks of celery in half and cube them small.
Dice 1/4 of an onion very small.
Cube 1 tomato into medium pieces.
Rinse and chop 1 bunch of spinach into medium pieces.
Remove stems from the cauliflower and cut florets into bite-sized pieces.
Peel and cube 1 medium potato into small pieces.
Smash 3 garlic cloves to remove the skin and then dice them small.
In a pan, add vegetable oil and heat it up.
Add the diced onion, celery, and garlic to the pan and cook until fragrant.
Add the cubed tomato and mix well until incorporated.
Add 1 tablespoon of butter and let it dissolve.
Add the cubed potatoes to the pan and mix well.
Pour in enough water to cover the vegetables and mix again.
Add the spices: 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon cumin, and 2 teaspoons smoked paprika.
Cover the pan and let it simmer for about 5 minutes.
After 5 minutes, add the cauliflower florets and cook for about 2 minutes until boiling.
Add the spinach and cook for 2 minutes, ensuring it stays green and doesn't overcook.
Turn off the heat and prepare to plate the soup.
