Norwegian Meatcakes with Roasted Root Vegetables

Peel and chop the root vegetables into even pieces.

In a skillet, melt butter over medium heat and sauté chopped onion until translucent, about 5 minutes.
In a large bowl, combine ground beef, ground pork, sautéed onion, bread crumbs, milk, egg, nutmeg, salt, and pepper.
Mix the ingredients until well combined and form into patties.
Heat a little oil in the skillet over medium heat and cook the meatcakes for 4-5 minutes on each side until browned.
Transfer the meatcakes to the oven for an additional 10 minutes to finish cooking through.
Serve the meatcakes alongside the roasted root vegetables, garnished with fresh parsley.
